Ultra-Dark Premium 8" Carving Knife is expertly crafted and thoughtfully designed to masterfully slice through flesh, breakthrough cartilage and trim fat from beef, pork, poultry, fish and other meats. Every carving task can be easily handled with this knife. This carving knife is constructed of high-quality German stainless steel (7Cr17MoV) that contains more Vanadium than other steels and as a result, it increases overall strength, wear resistance, and toughness comparing to other knives.
Sharpness & Durability: Constructed of high-quality German stainless steels (7Cr17MoV) and contains Vanadium, which improves the wear resistance and ease of sharpening. The blade resists stains and corrosion and holds its edge retention for a long period.

Hardness: Forged from 7Cr17MoV German steel with a Rockwell hardness of 58+. Ultra-high toughness and hardness make sharp blades difficult to bend and break.
